A knife dedicated to cut serrano ham (jamón serrano). It serves especially for cutting long slices of ham and is called cuchillo jamonero. This one was made out of ebony tree and damascus steel. 

In plans there are 2 more knifes to make a full set (cuchillo de descortezar and cuchillo de deshuese). Each of them has got its own special propteries in cutting the ham. Here are some visualisations which show how the whole set should look like:
